Rich Banana Bread


1/2 cup shortening
1 1/2 cups white sugar
2 eggs
1 cup mashed banana (3 – 4 bananas)
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 cups all-purpose flour
1/2 cup sour cream
1/4 cup milk
1 teaspoon vanilla extract

Preheat your oven to 350°F (175°C). Grease a bundt pan or two bread pans and set aside.
In a large mixing bowl, cream the shortening and gradually add sugar. Mix in the eggs one at a time, then stir in the mashed bananas.
Sift together the salt, baking powder, baking soda, and flour in a separate bowl. Gradually add these dry ingredients to the creamed mixture.
Stir in the milk, sour cream, and vanilla extract until just combined. Pour the batter into the prepared pan(s).
Bake for about 1 hour or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
