Pineapple Drizzle Bar

2 cups all-purpose flour
1/2 cup powdered sugar
1 cup unsalted butter, softened
1 cup crushed pineapple, drained
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cornstarch
1/4 cup shredded coconut (optional)


Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
In a medium bowl, combine the flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared baking dish.
Bake in the preheated oven for 15-20 minutes, or until the crust is lightly golden.
In a separate bowl, mix together the crushed pineapple, granulated sugar, eggs, vanilla extract, baking soda, salt, and cornstarch until well combined.
Pour the pineapple mixture over the baked crust and spread it evenly. Sprinkle shredded coconut on top if desired.
Bake for an additional 25-30 minutes, or until the top is lightly browned and the center is set.
Allow the bars to cool completely before cutting into squares.
